The great thing about grilling or roasting vegetables–besides the awesome smell–is how they taste afterwards. Add in some Italian Seasoning and salt and pepper and you have a great colorful side dish for any meal.
A nice healthy side dish that gives you the opportunity to use up all sorts of leftover fresh veggies. Mix and match as you please.

Remove the grill racks from the grill. Preheat the grill. Coat an unheated grill rack with coconut oil cooking spray just before placing on the grill.
Mix the olive oil and seasoning together in a measuring cup.
To a large bowl, add the zucchini, squash, eggplant, bell peppers, and onions on the rack. Drizzle the oil over the vegetables and use your fingers to rub the oil so it coats all the pieces. Place the veggies on the rack and place the rack over medium-hot coals, arranging it so the vegetables are 6’’ from the coals.
Grill for 4 to 6 minutes on each side, or until golden brown.
Note: You can also prepare these vegetables indoors under the broiler. Cook them 4 to 6 inches from the heat for 5 to 8 minutes.
