1. Preheat oven to 250 degrees F and position oven rack in the center of the oven. Slice your potatoes as thinly as possible. A mandolin works well here. The thinner they are, the crispier the chips will be.
Lightly coat potatoes with olive oil (use your hands to spread evenly). Spread out on baking sheet and sprinkle with salt.
Bake chips for one hour. Flip potatoes over and bake for another hour. Remove from oven when they’re crispy. Store in an air tight container. Enjoy!
