Instructions
  1. Cook penne according to package directions. Meanwhile, in a large skillet, add coconut oil. When heated, add the chicken and cook over medium heat until no longer pink. Remove and keep warm.
  2. In the same skillet, cook and stir broccoli in remaining oil for 2 minutes. Stir in the mushrooms and garlic. Cook for 2 minutes.
  3. Add the artichokes, salt and oregano, basil and heat through.
  4. Combine the flour with the broth and wine until smooth; stir into the pan. Bring to a boil; cook and stir for a 1-2 minutes or until thickened. Add the tomatoes and stir until heated through.
  5. Drain the penne but do not rinse; add to the chicken mixture and toss to coat. Sprinkle with parsley and cheese. Serve.
