Instructions
  1. Heat the oil and butter (or Ghee) in a stock pot over medium heat until butter melts. Add onion and sauté until translucent, approximately 5 minutes.
  2. Add garlic, carrots, celery, and sun dried tomatoes. Season with salt and pepper, chili powder, paprikas, cumin coriander. Sauté for a couple of minutes to toast the spices and soften the vegetables.
  3. Add the tarragon, sherry or wine and cook on high until all of the liquid has evaporated. Add tomatoes and the vegetable or chicken broth.
  4. Bring the soup to a boil. Cover and reduce heat to a simmer. Cook for 45 minutes.
  5. Use an emulsion blender in the pot to puree most of the large pieces of vegetables.
  6. Add the parsley and cilantro. Add the chocolate and enough honey to balance the acidity. Adjust seasoning to taste.
  7. Laddle soup into bowls and garnish with sliced green onions and fresh goat cheese or quest fresco.
