This is a quick and easy snack to make. I wrap them individually and keep them in the fridge. For a gluten-free snack, be sure the oats are certified gluten-free.

Instructions
  1. Line an 8 inch square pan with foil and very lightly grease.
  2. In a food processor, chop the dates (they will form a ball); transfer to a medium-size bowl.
  3. In a small saucepan over medium heat, melt the peanut butter and honey. Stir just until combined, about 1 minute. Add to the bowl and mix to combine.
  4. Fold in the almonds, oats, dried fruit of your choice, pumpkin, sunflower and chia seeds. Press the mixture into the prepared pan and freeze until sliceable, about 30 minutes. Cut into 12 bars. Store in the refrigerator.

You can purchase slivered almonds for this recipe as well.  Just be sure you stir them constantly and watch them carefully so they don't burn while roasting.

I use organic freshly ground unsalted peanut butter.  It mixes well and tastes better to me than commercial.
