Do you have an abundance of zucchini? This is my husband’s favorite muffin recipe and he enjoys one in the morning with his coffee. This recipe gives you a flavorful and moist muffin that you wouldn’t even know is gluten-free. These muffins are chock-full of shredded zucchini, carrots, nuts, and spices that all blend together to make the perfect muffin. You can substitute unsweetened applesauce for half the oil and add any combination of dried fruits and nuts...Read More »
I absolutely LOVE chocolate…creamy, thick, rich, and smooth. This gluten-free flourless chocolate torte provides all of those things…and more. If you haven’t tried this, or similar recipe AND you LOVE a rich chocolate dessert, you must try this recipe. Have you ever wished for a small piece of something semi-sweet and velvety smooth? All I want are a few bites…okay maybe more like six. I will agree to add some fresh berries but don’t even...Read More »
Who can resist kale pancakes?? *There is an option below to make these dairy free as well!* I was doubtful these green kale pancakes were going to pass my pancake taste test. This is mostly because I usually make either buttermilk or sourdough pancakes…when I make them. These are quick to make and simply yummy! Cook them on lower heat to retain the pretty green color. Move over green eggs and ham! Make room for the king of greens–KALE! I am on a mission to...Read More »
This cornbread recipe is from Pamela’s Products website, although I tweaked it a bit by adding vinegar to the milk prior to adding the milk to the dry ingredients. This is a another way to obtain a buttermilk-type taste that I prefer in my cornbread. I also added an extra tablespoon of butter to the batter and a tablespoon of butter to the pan to melt in the oven just prior to baking. Gluten-Free Cornbread – Does it taste just as good? Yes! This bread has a...Read More »
I absolutely LOVE these muffins! They are great for using up some veggies in the fridge. These muffins are so forgiving and allow you to put almost anything into them…well, within reason of course. I have made these a few different ways with great success. There are a number of ingredients in this recipe, but if you love them as much as I do, you’ll appreciate all the goodies and make them often. This recipe actually gives you about 18 muffins. I actually...Read More »

Mostly I’m thankful to Cathy Dick, for helping me a lot with previous decision making and daily planning. She has helped me put into practice a mind-set to be something that I wish to accomplish by the end of each day to the end of the year– focus on that, and make sure I do things in terms of preparing myself mentally and physically before I start. She has a lot of great resources that she shares freely too. You can trust her to do what she says she’ll do.

What a huge difference Cathy made in my office at work! She helped me organize the mountains of paperwork and chaos and now it looks great! I have a system that I know will work for me because she made sure that things were organized by how I use them…everything in its place! I value Cathy’s creativity, integrity, originality and helpfulness in all the organizing/time management projects she does. Next I plan to take her Time Strategies program so I can get my business calendar, appointments and desk organized. Can’t wait!!

Cathy’s insight and guidance has, and continues, to help me organize my previously chaotic life into a group of systems that work well together. Her program helped me reduce the stress of trying to keep track of so many things at once, and save me significant time that can be used for more productive things. If you’re feeling overwhelmed by all the things you have to do and to keep track of, I highly recommend that you speak with Cathy about how her Time Strategies can help you make your life make sense.
