Instructions
  1. Preheat the oven to 375 degrees. Get out a sheet cake pan with edges.
  2. Wash and cut up all vegetables into 1/2 inch pieces. Add them to a large bowl.
  3. Mix together the olive oil and remaining ingredients and add to the vegetables. Mix well to coat.
  4. Pour the vegetable mixture onto the pan and spread the vegetables out so they are all in a single layer.
  5. Bake uncovered for 25-35 minutes or until vegetables are tender and golden brown, checking every 10 minutes. Stir once or twice to prevent vegetables from sticking to pan. Serve immediately.

Note:  Try a number of vegetable variations, adding onion, peppers and cauliflower.  Roasting only one kind of vegetable makes a nice side dish.

Also, try a variety of herb mixtures for different flavor combinations.

Add some shaved Parmesan cheese for more flavor.
