Instructions
  1. Place the sugar and cornstarch in a small saucepan. Gradually add the orange juice and vinegar, whisking to dissolve the dry ingredients. Add the ginger and garlic. Cook, stirring, over medium-high heat for 2 to 3 minutes, or just until the mixture boils. Remove from heat and whisk in the oil. Allow to cool.
  2. In a large bowl, combine the spinach, orange segments, onion, and kiwifruit. Add the dressing and toss to coat evenly.
