Instructions
  1. Preheat the oven to 350o F. Coat a 9’’ x 13’’ nonstick baking dish with cooking spray.
  2. In a large bowl, beat together the eggs and egg whites. Stir in the zucchini, mozzarella, onions, Parmesan cheese, flour, dill, and baking powder. Spoon the mixture into the prepared baking dish. Bake for 30 to 35 minutes, or until a toothpick inserted in the center comes out clean. Cool in the pan for 5 minutes. Cut into 24 squares. Serve warm or cold.

Variation: Sun-Dried Tomato Zucchini Bites: Replace the dill with 1 tablespoon chopped fresh basil. Place 8 dry-packed sun-dried tomatoes in a cup or small bowl. Cover with boiling water and let soak for 15 minutes, or until softened. Finely chop and stir into the zucchini mixture.
